This soup is a perfect autumn treat. It’s so full of flavour and is so easy to make, you’ll absolutely love it!
To make the soup you’ll need:
3 small potatoes
Salt, chilli flakes, 3 cloves of garlic & 2 bay leaves to season
Start off by peeling the pumpkin, carrot and potatoes. Chop them into even medium chunks.
Place the veggies into a pot and cover with cold water. Add seasoning, bring to boil and simmer for 25mins. Add lentils and continue simmering for another 20mins or until veggies are falling apart and lentils are going mushy.
Take the pot off the stove, remove the bay leaves and blend the soup until it forms smooth consistency.
Garnish with some chilli powder, pumpkin seed oil & sunflower seeds. Voila!
